Corn Salsa 
6 cups raw corn, whole kernels 
½ cup red pepper, diced
1 T jalapeno peppers, finely minced
½ cup red onion, minced
½ cup cilantro, minced
2 T olive oil
1 T lemon juice
½ t sea salt
½ t cayenne pepper
1 t garlic powder

Shave the corn kernels off each cob. Be careful not to shave too close to the cob, yet close enough to cut off the complete kernels. If the kernels have the dry white tips on the end, you have cut in too far. Mix kernels, red pepper, jalapeno peppers, onion and cilantro. Stir well. Pour in olive oil and lemon juice. Add sea salt, cayenne pepper and garlic powder. Adjust spice ingredients to taste.  

Raw corn is so delicious and nutritious! This salsa is versatile and can be served in so many different ways, as a salsa, side dish, mixed with any of the salads or mixed with other vegetables to make a soup. It is also wonderful with the tortilla chips with a hint of jalapeno!  

Nutritional note: Corn promotes pancreatic health and aids in fighting anemia. Garlic fights high blood pressure and is a blood cleanser.


Lemon Chicken

4 chicken breasts
½ cup yellow onion, diced
½ cup apple cider
½ cup lemon juice
1 T garlic powder
2 T basil flakes
¼ t sea salt

Preheat oven at 375 degrees.
Puncture chicken all over with a fork. Mix lemon juice and apple cider together. Place chicken in 9� X 13� baking pan. Slowly pour all over the chicken breasts. Leave juice in pan for the chicken to bake in. Season chicken with garlic powder, basil and salt. Bake for 30 minutes or until chicken is done.
  
Topping

½ cup lemon zest
1 T honey
2 T of apple cider and lemon juice mixture 

Wash lemons thoroughly. You may need up to 3 lemons according to the size of the lemons to get ½ cup of zest. Grate the zest from the lemon rinds with a grater. Place lemon zest in a small mixing bowl. Add honey. Add apple cider and lemon juice mixture from the baked chicken. Stir ingredients together. Pour topping onto chicken when served. The remainder of the mixture may be used to serve over rice.

Nutritional note: Lemons contain potent phytochemicals which make them effective as an antioxidant, free radical scavenger and immune system modulator. They also have anti-inflammatory properties. Lemons are a great source of Vitamin C. They help to fight colds and infections.  

Beet & Strawberry Juice
2 medium beets
2 large carrots
1 peach
1 cup strawberries
1 tangerine

Wash beets, carrots, peach and strawberries thoroughly. Remove any access stem or roots from beets or carrots. Remove seed from peach. Cut away all leafy stems from strawberries. Peel tangerines. Cut all ingredients to fit your juicer. Juice and enjoy!

Nutritional note: This juice is designed to promote liver health.

Pomegranate Salad
Cucumber Sandwich
Healthy Collard Greens
2 cups red cabbage, chopped
2 cups kale, chopped
1 cup iceberg lettuce, chopped
1 cup cucumber, diced* 
½ cup cilantro, minced*
¼ cup red onion, minced*
1 cup carrots, finely minced
½ cup pecans, pieces 
½ cup pomegranate seeds
2 T olive oil
2 T pomegranate juice
½ cup apple cider
1 t lemon juice
½ t sea salt

Mix cabbage, kale, lettuce, cilantro and red onion together. Stir in olive oil, lemon juice, apple cider and salt. Stir thoroughly. Layer remaining ingredients on top of mixture for beautiful presentation in this order: cucumber, carrots, pecans, pomegranate seeds.  

Nutritional note: The pomegranate is a blood purifier. It relieves liver congestion and helps to fight obesity, arthritis and obesity. It helps to prevent the formation of unwanted blood clots. Pomegranate juice is a powerful antioxidant and has anti-aging qualities. It is beneficial to cardio vascular health. Tests have proven that it helps to fight prostate cancer.  


4 bunches of collard greens, chopped
1 medium onion, diced
2 roma tomatoes, chopped
4 sliced garlic cloves (or 2 T garlic powder)
1 t apple cider vinegar
½ t Cajun seasoning
2 T olive oil
Pinch of sea salt

Sauté onion in olive oil in sauce pan or skillet until caramelized. Stir in sliced garlic. Stir in tomatoes and cook them for approximately 3 minutes, stirring constantly. Add collard greens. Stir collards until they are all moist from the sauce in the pan. Stir in vinegar. Add salt and Cajun seasoning. Stir thoroughly. Bring to boil, then turn heat down to low. Let simmer for about 15 minutes or until collards are as tender as desired.

Nutritional note: Collard greens help to lower bad cholesterol. Studies have shown that eating this cruciferous vegetable will cause colon cancer cells to commit suicide!


2 slices of whole wheat bread
6 slices cucumber
2 T red onion, thinly sliced
2 slices of tomato
2 T lettuce, thinly shredded
1 T cream cheese

Toast bread. Spread cream cheese onto each slice of bread. Layer sandwich with tomato, cucumber, onion and lettuce.

Nutritional note: Cucumbers are so refreshing. They are known to improve the complexion of the skin and overall health of the skin.
